THREE BEAN SALAD
INGREDIENTS
1-15oz can black beans
1-15oz can cannellini beans
1-15oz can red kidney beans
4 scallion, thinly sliced
1 gala apple, chopped into cubes
DRESSING
2 tablespoons red wine vinegar
2 tablespoons fresh lemon juice
2 tablespoons ketchup
1 tablespoon tomato paste
1 small clove garlic, finely minced or grated
1 teaspoon kosher salt
1/4 cup olive oil
Directions
Add all three cans of beans to a strainer and rinse until the water runs clear.
In a large bowl, combine beans, apple, scallion.
In a medium bowl, whisk together vinegar, lemon juice, ketchup, tomato paste, garlic, and salt until full combine. Whisk in olive oil in a slow stream, until the dressing is fully emulsified and creamy.
Pour the dressing over the bean mixture and mix until everything is coated in the dressing. Top with extra scallion and serve.
*this salad is great a day or two after it’s made, so it’s a great make ahead dish. Just refrigerate the salad until you’re ready to serve.
