SPICY LEMON GARLIC GREEN BEANS

INGREDIENTS

1 pound green beans

1 tablespoon olive oil

4 cloves garlic, minced

1 shallot, thinly sliced

1/2 teaspoon crushed red pepper

1 lemon, zested

salt and pepper

Bring a large pot of salted water to a boil.

Fill a large mixing bowl with ice cubes. Pour cold water over ice cubes until they are fully submerged. Set aside.

Add the green beans to the boiling water and cook for 2 minutes. Using tongs, remove the green beans from the boiling water and place them immediately into the ice water. *this will help the green beans stay bright green and crunchy

Once the green beans have cooled completely, remove them from the ice water and let them drain on a kitchen towel.

While the green beans are drying, heat olive oil in a large skillet over medium-high heat. Once the olive oil is shimmering, add the shallots, garlic, and crushed red pepper. Sauté for two minutes, until the garlic is fragrant.

Add the green beans to the pan. Mix everything together, making sure all ingredients are evenly distributed amongst the green beans. Cook until green beans are fully heated through. Season with salt and pepper as needed.

Place the hot green beans on a plate and top with lemon zest. Serve immediately.
