Skirt Steak with Cucumber Salsa

Ingredients

1 English cucumber, seeded and finely chopped

2 tablespoons red onion, finely chopped

1 tablespoon cilantro, finely chopped

1 tablespoon olive oil

1 tablespoon red wine vinegar

1.5 lbs skirt steak

Directions

In a medium bowl, combine cucumber, onion, cilantro, oil, and vinegar. Season with salt and pepper.

Heat grill to medium-high. Season steak with salt and pepper. Grill steak, turning once, until grill marks form, about 5 minutes per side (depending on thickness). Transfer steak to cutting board and let rest for 10-15 minutes before slicing.

Slice steak against the grain and serve with salsa.
