SHRIMP SOUVLAKI
INGREDIENTS
SHRIMP
1 pound shrimp (18-20 count), peeled and deveined
1 lemon, juiced
1 tablespoon dried oregano
1 tablespoon red wine vinegar
2 tablespoons olive oil
1 clove garlic, minced
1 teaspoon salt
¼ teaspoon ground black pepper
TZATZIKI
2 cups plain Greek yogurt
1 clove garlic, minced
1 seedless cucumber, grated
1 lemon, juiced (~2 tbsp)
1 ½ tablespoons fresh dill, chopped
½ teaspoon salt
¼ teaspoon ground black pepper
SALAD
1 pint cherry tomatoes, sliced in quarters
3 mini cucumbers or 1 English cucumber (seeds removed), chopped
¼ red onion, chopped small
1 lemon, juiced
1 tablespoon olive oil
salt, to taste
FOR SERVING
Pita, lightly grilled

Cous cous
Parsley
directions
Shrimp
Place lemon juice, oregano, vinegar, oil, garlic, salt and pepper into a large zip lock bag or bowl. Add shrimp and let marinate for 20 minutes to 1 hour.
While the shrimp is marinating, place your wooden skewers in water.
Once the shrimp is done marinating, place 4-5 shrimp on each skewer (I like to double skewer my shrimp as seen in the photo).
Over medium high heat, grill your shrimp about 2-3 minutes per side.
Tzatziki
In a medium bowl, mix together the greek yogurt, garlic, cucumber, lemon, and dill. Season with salt and pepper.
Salad
In a medium bowl, mix together tomatoes, cucumber, onion, lemon, and olive oil. Season with salt and pepper.
Serve the shrimp with pita, tzatziki, salad, lemons, cous cous and parsley.
