BAKED SHRIMP SCAMPI

INGREDIENTS

2 pounds (12-15 count) shrimp, peeled and deveined, tails on

2 tablespoons olive oil

2 tablespoons dry white wine

1/2 cup unsalted butter (1 stick), room temperature

4 cloves garlic, minced

1 shallot, minced

3 tablespoons parsley, minced

1 teaspoon rosemary, minced

1 lemon, zested and juiced

1 egg yolk

1/4 teaspoon crushed red pepper (optional)

Directions

Preheat oven to 425F.

In a medium size mixing bowl, gently toss together olive oil, white wine and shrimp. Season with salt and pepper. Allow the shrimp to marinate at room temperature until the butter mixture is ready.

In a small bowl, mash together butter, garlic, shallot, parsley, rosemary, lemon zest and juice, and the egg yolk. Season with salt and pepper.

Place the shrimp and marinade in a 9x13-inch baking dish. Spread the butter mixture evenly over the shrimp and bake for 10-15 minutes, until hot and bubbly.

*I love to serve this over fresh pasta. There is enough butter in the dish to coat a pound of pasta with no extra sauce needed.
