PERFECT SCRAMBLED EGGS
Ingredients
1/2 tablespoon unsalted butter
3 eggs
1 tablespoon milk (any kind works)
salt and fresh cracked black pepper
Directions
Melt butter in a medium non-stick pan over medium-low heat.
In a bowl, whisk together eggs and milk until fully combined. Season with a pinch of salt.
Add eggs to the melted butter and immediately use a heat resistant spatula to move eggs in a small circular motion until curds begin to form. This will take about 30-60 seconds.
Change from a small circular motion to a long sweeping motion across the pan.
When the eggs are beginning to set, remove the pan from the heat and continue to move the eggs until they are fully cooked. Season with additional salt and cracked black pepper. Serve immediately.
