PARMESAN ROASTED CAULIFLOWER
INGREDIENTS
1 head cauliflower, cut into small florets
1/4 cup parmesan cheese
1/4 cup panko bread crumbs
1/4 teaspoon herbs de provence
1 tablespoon + 1 teaspoon olive oil
salt
cracked black pepper

Preheat oven to 425F.
Place cauliflower on a baking sheet. Pour 1 tablespoon of olive oil over the top and season with salt and pepper. Toss to make sure all of the cauliflower is coated in the olive oil. Bake for 15 minutes.
While the cauliflower is baking, combine 1 teaspoon of olive oil with the bread crumbs and herbs de provence. Set aside.
Once the cauliflower has finished baking, remove from the oven and top with the bread crumb mixture. Place the cauliflower back into the oven and cook for an additional 10 minutes.
After the 10 minutes, remove the baking sheet and top the cauliflower with parmesan cheese. Return the cauliflower to the oven for an additional 2 minutes. Remove from the oven and immediately, with a spatula, scrape up the cauliflower and bits of melted parmesan cheese from baking sheet.
Place into a serving dish. This is great hot or room temperature.
