INGREDIENTS

2 pounds chicken wings

7oz can of chipotles in adobo

2 tablespoons balsamic vinegar

2 tablespoons maple syrup

1 tablespoon soy sauce

GARNISH

cilantro leaves

scallion, thinly sliced

jalapeño, thinly sliced

Directions

Make the marinade by adding the chipotles in adobo, balsamic, maple syrup, and soy sauce into a blender. Blend until smooth.

Place the wings into a large zip lock bag. Pour the marinade over the wings and close the bag (try to remove any excess air from the bag when you close it). Let the chicken sit on the counter for 30 minutes to 2 hours while it marinates.

Preheat your oven to broil (500F). Line a rimmed sheet tray with aluminum foil.

Place the wings on the tray with about 1/2 inch between each wing so they are not over crowded (this is the secret to making your wings crispy!). Put the tray into the oven on the top rack.

After 5 minutes, flip the wings over and cook for another 5 minutes. Then remove the wings from the top rack, and place them on the middle rack and cook for an additional 5 minutes or until the internal temperature of the wings is 165F.

Remove from oven, and top with your desired garnishes.
