Mexican Style Zucchini

ingredients

3 zucchini, diced

1 tablespoon olive oil

1/2 teaspoon chili powder

1/2 teaspoon garlic powder

1/8 teaspoon cayenne

salt & pepper

2 oz queso blanco

1 lime, juiced

cilantro (optional)

directions

Preheat oven to 425F.

In a medium bowl, mix together zucchini, olive oil, chili powder, garlic powder, cayenne, salt and pepper until everything is fully coated.

Spread the zucchini evenly on a baking sheet and roast for 25-30 minutes, or until zucchini is browned.

To serve, place zucchini on a platter and top with queso blanco, lime juice and cilantro.
