MEXICAN STREET CORN SALAD

INGREDIENTS

5-6 ears of corn, husk removed

2 tablespoons cilantro, chopped

2 tablespoons cotija cheese, grated

DRESSING

1 tablespoon mayonnaise

2 limes, juiced

1/8 teaspoon cayenne pepper

1 clove garlic, finely minced or grated

Directions

In a large bowl, cut corn off the cob. Toss the corn with cilantro and cotija cheese.

In a small bowl, whisk together mayonnaise, lime juice, cayenne, and garlic until fully emulsified.

Pour the dressing over the corn and mix until fully coated.

To serve, top the corn with extra cotija cheese, a sprinkle of cayenne, and a lime wedge.
