HALIBUT WITH WHITE WINE & CAPERS
INGREDIENTS
2 8oz halibut steaks
1 tablespoon olive oil
1/2 cup dry white wine (something you like to drink)
2 cloves garlic, minced
1/4 cup unsalted butter
2oz jar capers (with liquid)
salt and pepper

Season each piece of halibut with salt and pepper on both sides.
Heat olive oil in a large skillet over medium-high heat. Once the olive oil is shimmering, add the halibut and sear on both sides until nicely browned (2-3 minutes per side). Remove from pan, and set aside.
In the same pan you seared the halibut in, over a low flame, pour the wind into the pan. Use a spatula to scrape any browned bits from the bottom of the pan. Let the wine reduce until there is almost nothing left in the pan, then stir in the garlic, butter and capers with the liquid. Season the sauce with salt and pepper.
Let the sauce simmer the sauce for 1-2 minutes to blend the flavors.
Return the halibut to the pan and coat them with sauce. Cook until fish flakes easily with a fork. Serve fish immediately with the sauce poured over the top.
