HEALTHY BANANA BREAD

ingredients

1 cup mashed ripe bananas (~2-3 bananas)

2 eggs

1/2 cup unsweetened apple sauce

1/3 cup maple syrup

1/4 cup greek yogurt

1 teaspoon vanilla extract

1 3/4 cups white whole wheat flour

1 teaspoon baking soda

1/2 teaspoon salt

1/3 cup dark chocolate chips or chopped walnuts (optional)

Preheat oven to 325F.

In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

In a large bowl, beat together the eggs, apple sauce, maple syrup, yogurt, and vanilla for two minutes. Fold in the bananas and flour mixture.

Pour batter into a greased loaf pan, sprinkle the top with walnuts or chocolate chips or your topping of choice. Bake for 50-55 minutes or until a toothpick inserted into the center of the bread comes out clean.

Let the bread cool for 10 minutes. Slice and enjoy!
