French Style Potato Salad
Ingredients
2 pounds baby yellow potatoes, halved
1 cup scallion, chopped
2 tablespoons dijon mustard
3 cloves garlic, minced
2 tablespoons red wine vinegar
2 tablespoon apple cider vinegar
3 tablespoons olive oil
1/2 cup fresh dill, chopped
salt & pepper
Directions
Place the potatoes in a pot and cover with cold water. Add a healthy dash of salt and bring to a boil. Once boiling, reduce the heat to medium-high and cook for 10-15 minutes, or until potatoes can be easily pierced with a fork.
While the potatoes are cooking, prepare the dressing. Add mustard, garlic, vinegars, olive oil, salt and pepper to a bowl and whisk together until fully emulsified.
Once the potatoes have finished cooking, drain them and toss immediately with the dressing. Add the scallion and mix everything together. Let sit for 20 minutes before serving. This can be served warm, room temperature or chilled.
