EASY REFRIED BEANS

INGREDIENTS

1 tablespoon olive oil

1 yellow onion, diced

3 cloves garlic, minced

2-15oz cans pinto beans, drained and rinsed

1/2 cup vegetable stock

1 teaspoon chili powder

1/2 teaspoon cumin

1/2 teaspoon dried oregano

1/4 teaspoon cayenne

1 lime, juiced

Directions

In a non-stick skillet, heat up olive oil over medium-high heat. When hot, add the onion. Season with salt and sauté until onion starts to soften, about 5 minutes. Add in garlic and sauté for an additional 2 minutes until fragrant.

Add in the pinto beans, vegetable stock, chili powder, cumin, oregano, and cayenne. Stir to combine. Bring all ingredients to a simmer. Using a potato masher, mash the beans until they have reached your desired consistency.

Continue to cook for an additional 5 minutes. Remove from heat and stir in lime juice. Season with additional salt and pepper. Serve warm.
