Cilantro Lime Chicken Cheeseburgers

Ingredients

1 pound ground chicken breast

1/2 lime, juiced

1 clove garlic, minced

1/2 teaspoon chili powder

4 scallions, finely chopped

1/2 cup cilantro, chopped

4 slices pepper jack cheese

4 brioche buns

guacamole

Spicy Mayo:

2 tablespoons mayonnaise

1 1/2 teaspoons sriracha

Directions:

Make the guacamole, and set aside.

In a small bowl, combine mayonnaise and sriracha. Set aside.

In a large bowl, mix together chicken, lime juice, garlic, chili powder, scallion, and cilantro. Form the chicken into 4 patties.

Preheat a cast iron skillet, or grill over medium-high heat. Add a touch of olive oil and place the burgers into the skillet. Cook 3-4 minutes on the first side. Flip the burgers over and cook for an additional 3-4 minutes. Place a slice of cheese on each burger in the last minute and add a tablespoon of water to the pan. Cover the skillet immediately and steam for 1 minute or until the cheese is melted.

On the bottom bun, add desired amount of spicy mayo, top with the burger and then guacamole. Serve immediately.
