CHICKEN LETTUCE WRAPS
INGREDIENTS
1 tablespoon olive oil
2 pounds ground chicken breast
3 cloves garlic, minced
1 red bell pepper, cored and finely chopped
1 small yellow onion, finely chopped
1/2 cup hoisin sauce
2 tablespoons reduced sodium soy sauce
8oz can sliced water chestnuts, drained and rinsed
1 1/2 cups cooked white rice
1 head iceberg lettuce or butter lettuce
Directions
Heat olive oil in a large skillet over high heat. When oil is shimmering, add in the ground chicken. Cook until chicken fully cooked and all liquid has evaporated. Make sure to break up the chicken into small pieces as it’s cooking. Season with salt and pepper.
Once there is no more liquid in the pan, add the garlic, red pepper, and onion. Cook until vegetables start to soften, about 5-7 minutes. Then add the hoisin, soy sauce, water chestnuts and cooked rice.
Let all ingredients simmer together until there is a think coating over the chicken mixture, about 5 minutes.
Separate the lettuce leaves, serve with chicken filling and extra hoisin sauce.
