CHICKEN FAJITAS
INGREDIENTS
2 pounds chicken breast
2 tablespoons fajita seasoning
2 tablespoons olive oil
1 red bell pepper, cored and thinly sliced
1 yellow bell pepper, cored and thinly sliced
1 red onion, thinly sliced
1 yellow onion, thinly sliced
SERVE WITH
flour tortillas, guacamole, hot sauce, lime, pickled jalapenos, shredded cheddar cheese, cilantro
Directions
Sprinkle the fajita seasoning over both sides of the chicken breast.
In a cast iron skillet over medium-high heat add one tablespoon of olive oil. Once the oil is shimmering add your chicken to the skillet. Cook about 4-5 minutes per side, depending on thickness.
Once the chicken is fully cooked, remove from the pan and let it rest before slicing.
In the same skillet used for the chicken, over high heat, add a tablespoon of olive oil. Then add the peppers and onions. Cook for 7-10 minutes, letting the moisture from the vegetables pick up the left over seasoning from the chicken.
When the peppers and onions are done cooking, slice the chicken into strips.
Serve with tortillas, guacamole, hot sauce, lime, pickled jalapenos, shredded cheddar cheese, and cilantro.
