Cheesy Chickpea Arrabiata

ingredients

2 cans chickpeas, drained and rinsed

1 yellow onion, thinly sliced

2 cloves garlic

24oz jar arrabiata sauce

1/4 cup water

1 1/3 cup part skim shredded mozzarella

basil

directions

Heat olive oil over medium high heat in a skillet. Add onion and sauté until translucent, about 2-3 minutes. Add garlic and cook for an additional minute, until fragrant. Add chickpeas, arrabiata sauce, and water. Season with salt and pepper. Allow the chickpeas to simmer for 10-15 minutes.

While the chickpeas are simmering preheat the broiler.

Once the chickpeas are done simmering, top with cheese and transfer the skillet to the broiler. Broil until cheese is melted, bubbly and golden brown. Top with basil and serve with crusty bread.
