CAULIFLOWER GNOCCHI NACHOS
INGREDIENTS
2 bags Trader Joe’s cauliflower gnocchi
1 tablespoon olive oil
1/2 pound lean ground beef
1 tablespoon taco seasoning
1 cup black beans, drained and rinsed
1/2 cup corn, cut off the cob (you can use frozen)
3/4 cup Mexican blend cheese, shredded
1 roma tomato, diced
1/4 cup red onion, diced
1 jalapeño, sliced very thin
2 tablespoons sour cream
2 tablespoons fresh cilantro leaves
directions:
Preheat oven to 400F.
In a large skillet, over medium-high heat, add the olive oil. Once the oil is shimmering, add the cauliflower gnocchi to the pan and sauté until all sides of the gnocchi are lightly brown, about 7-10 minutes.
Once the gnocchi is done cooking, place the gnocchi into a 9”x13” baking dish and set aside.
In the same skillet we used for the cauliflower, add a touch of oil and add the beef. As the beef is cooking, break it up into small pieces. Once the beef has begun to brown, add the taco seasoning, and continue to cook the beef until fully brown.
Top the gnocchi with the ground beef mixture, black beans, corn, and cheese.
Place into the preheated oven and bake until the cheese has melted, about 5-6 minutes.
Remove from the oven, top with tomato, onion, jalapeño, sour cream and cilantro.
