Buffalo Cauliflower Dip

INGREDIENTS:

1 small head of cauliflower, cut into small bite size pieces

1 tablespoon olive oil

8oz reduced fat cream cheese

1 1/2 cups part skim mozzarella, shredded

1 cup hot sauce (I used Frank’s Buffalo Hot Sauce)

1/4 cup ranch dressing

1/2 cup scallion, green parts sliced

DIRECTIONS:

Preheat oven to 375F. Line a baking sheet with aluminum foil.

Spread cauliflower evenly on the baking sheet. Drizzle with olive oil and season with salt and pepper. Place the cauliflower into the oven and bake for 20-25 minutes, or until cauliflower is lightly brown. Once the cauliflower is done cooking, remove it from the oven and set it aside.

In a large mixing bowl, combine cream cheese, 1 cup of mozzarella, hot sauce, ranch, and half of the scallion (1/4 cup). Mix everything together and then add the cooked cauliflower.

Spread the cauliflower mixture evenly into a 9"x9” baking dish and top with the remaining mozzarella cheese. Bake for 25-30 minutes, until the cheese is completely melted and the edges of the dip are bubbling and brown.

Remove dip from the oven and top with the remaining scallion. Serve warm.
