BREAKFAST TACOS
Ingredients
12 corn tortillas
1 tablespoon olive oil
1 dozen eggs
1 1/2 tablespoons hot sauce
1 batch easy refried beans (or use 1-15oz can)
1 batch baked bacon, cut into pieces
Toppings: cheese, salsa, avocado, cilantro, jalapeños, hot sauce
Directions
While the refried beans and bacon are cooking, prepare the eggs.
In a large bowl, whisk together the eggs and hot sauce together. Season with salt and pepper. In a large non-stick skillet over medium heat add olive oil. When the oil is warm, add in the eggs. Using a heat resistant spatula, move the eggs in a small circular motion until curds begin to form. This will take about 1-2 minutes.
Change from a small circular motion to a long sweeping motion across the pan.
When the eggs are beginning to set, remove the pan from the heat and continue to move the eggs until they are fully cooked.
Once the eggs, beans, and bacon are ready it’s time to assemble the tacos. Heat the tortillas in the microwave covered by a damp paper towel for 60 seconds, or until all the tortillas are warm.
Spread a spoonful of refried beans on the bottom of each tortilla, add your eggs and top bacon. Then load up with your desired toppings!
