BANANA OATMEAL PANCAKES

INGREDIENTS

1 ripe banana

2 eggs

1 egg white

2 cups rolled oats

1/2 cup milk (non-fat or almond milk)

2 tablespoons maple syrup

2 teaspoons baking powder

1/2 teaspoon salt

2 teaspoons vanilla extract

coconut oil

Directions

In a blender combine banana, eggs, oats, milk, baking powder, salt and vanilla. Blend until completely smooth.

Heat a non-stick skillet over medium-high heat. Once warm, add about a teaspoon of coconut oil. Pour about 3 tablespoons of batter into a circle. Repeat, leaving about an inch in between each pancake. Cook for 2-3 minutes, when bubbles start to form on the top, flip the pancakes and cook for an additional 1-2 minutes. Work in batches until batter is finished.

Top with additional banana slices or fruit of choice, and a drizzle of real maple syrup.
