Bahn Mi Burgers
Ingredients
1 pound ground beef
2 tablespoons basil, finely chopped
4 cloves garlic, minced
3 scallions, finely chopped
1 tablespoon soy sauce
1 tablespoon sriracha
1 tablespoon maple syrup
2 teaspoons corn starch
salt and pepper
Sriracha Mayo:
1/2 cup mayonnaise
1 tablespoon sriracha
1 lime, juiced
1 scallion, minced
Pickled Veg:
1 cup carrots, matchstick cut
1 cup cucumber, matchstick cut
1 cup water
1/2 cup rice vinegar
3 tablespoons sugar
1 teaspoon salt
Garnish:
cilantro
sliced jalapeño
4 brioche buns
Directions:
In a large bowl, combine all Ingredients for beef patties and mix to combine. Separate into 4 equal size patties.
In a small bowl, combine ingredients for sriracha mayo and whisk til smooth.
To make your pickled veg, combine vinegar, water, sugar and salt in a small pot. Place the pot over medium heat and stir until sugar has dissolved. Remove from heat. Pour the vinegar mixture over the vegetables and let sit until it cools.
Preheat grill or cast iron skillet to medium high heat. Add beef patties to the grill and cook about 4-5 minutes per side (depending on thickness). If you’re using a cast iron skillet, lightly coat the skillet with sesame oil before placing the patties in.
To prepare the burgers, toast the buns under the broiler or on the grill. Add sriracha mayo to the bottom bun, top with sliced jalapeño, cilantro, beef patty and then the pickled veg. Top with the bun and serve immediately.
